Orange Cinnamon Oatmeal Muffins

Ingredients
  • 3 cups old fashioned rolled oats
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ¼ cup unsweetened vanilla almond milk
  • ¼ cup fresh orange juice
  • 3½ cupsmashed bananas
  • 1 large egg
  • ¼ cup erythritol
Steps
  1. 1. In a medium bowl, mix all of the ingredients together, stirring until well combined.
  2. 2. Place six silicone muffin cups inside of a 6" cake pan. Spoon the oatmeal mixture into the muffin cups. Cover the pan with aluminum foil.
  3. 3. Pour 1 cup water into the inner pot and place the steam rack inside. Place the cake pan with the muffins on the rack. Secure the lid.
  4. 4. Press the Manual or Pressure cook button and adjust the time to 15 minutes.
  5. 5. When the time beeps, quick-release pressure until float valve drops and then unlock lid.
  6. 6. Carefully remove the pan from the inner pot and remove the foil from the top. Let the muffins cool 15 m inutes before eatin. the will become firm as they cool.
