  • 2 cups water, plus more during the simmering process
  • 1 lb salt pork (or ham bone or ham hocks)
  • 6 slices bacon
  • 1 medium onion, chopped
  • 2 jalapeños, seeded and chopped
  • 3 cloves garlic, minced
  • 2 tbsp pork lard (optional)
  • ½ cup fresh cilantro, chopped
  • 2 tomatoes, roughly chopped
  • 1 tsp dried cumin
  • 1 tsp dried oregano
  • 1½ tsp salt
  • ½ tsp black pepper
