Ingredients
- Rough puff pastry

- 180 to 200ml cold water
- Filling

- 1 small onion, finely diced
- 400g sausage meat (or your favourite sausages, skinned)
- 125g Stilton, crumbled
- 1 Tbsp thyme leaves
- A pinch of white pepper

- 2 egg yolks, beaten, to glaze
- 2 tsp nigella seeds
- 2 tsp sesame seeds
