Tomato, Egg, and Olive Salad Recipe with Gorgonzola Vinaigrette (Low-Carb, Gluten-Free, South Beach Diet)
Ingredients
  • 3 to 4 fresh tomatoes, sliced ½ inch thick
  • 2 to 3 boiled eggs, sliced ½ inch thick

  • 6 oz. can black olives, well drained
  • (use less if you're not a big olive fan)
  • salt, fresh ground black pepper to taste
  • (I used Rosemary Salt.)
  • subheading: Vinaigrette Ingredients:
  • 2 T extra virgin olive oil
  • 1 T best quality balsamic vinegar
  • 1 T crumbled gorgonzola
