Spicy Pork, Sage and Tomato Pappardelle
Ingredients
  • ⅓ cup fresh sage leaves (see note)
  • 2 tablespoons olive oil
  • 100g Primo Gourmet Selection Pancetta, diced
  • 3 garlic cloves, crushed
  • ¼ cup red wine
  • 400g can diced tomatoes
  • ¼ teaspoon dried chilli flakes
  • 375g dried pappardelle pasta
  • 200g piece leftover roast pork, diced (see related recipe)
  • Shaved parmesan, to serve
