  • 1 McIntosh or Granny Smith apple , peeled and chopped
  • 1 900 ml pkg no-salt-added vegetable broth
  • ⅓ cup 35% cream
  • 2 teaspoons lemon juice

  • 8 teaspoons extra-virgin olive oil
  • 2 slices rustic white bread , cut in ½-inch cubes
  • 2 tablespoons finely grated Parmesan cheese
  • pinch salt and pepper
