Asparagus Frittata with Parmesan and Shallots
Ingredients
  • 12 large eggs
  • 2 tbsp sour cream, or full-fat greek yogurt
  • ½ tsp kosher salt
  • ½ tsp ground pepper
  • 1 tbsp chopped fresh chives, plus more for garnish
  • 2 oz shaved parmesan cheese
  • 2 tbsp butter
  • 2 medium shallots, thinly sliced
  • 1 lb asparagus, ends trimmed, sliced into 2” pieces
