  • 1 tablespoon fresh ginger minced
  • ¼ cup tomato paste
  • 4 cups chicken or vegetable stock
  • 1 pound boneless skinless chicken breasts
  • 12 ounces cauliflower rice fresh or frozen (no need to defrost)
  • ½ teaspoon freshly ground pepper
  • ½ cup fresh cilantro finely chopped
