Gluten-Free Chicken Pot Pie
Ingredients
  • 4 cups shredded rotisserie chicken white and dark meat
  • 2 Tbsp avocado oil
  • 1 large yellow onion chopped
  • 4 cloves of garlic finely chopped
  • 24 oz portobello mushrooms washed, stemmed and sliced
  • 2 lbs cubed butternut squash
  • 10 oz frozen peas
  • 4 cups gluten-free chicken broth divided
  • 4 Tbsp butter or dairy-free substitute
  • ½ cup Bob's Red Mill 1-to-1 Gluten-Free Flour
  • 1 tsp rosemary
  • 1 tsp thyme
  • 1 tsp Kosher salt
  • Fresh ground pepper to taste
  • 1 package of Schar's gluten-free puff pastry or make your own, see notes
