Ingredients
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 2 cups unsweetened almond milk (or use 1%,2%, or whole milk)
  • 2 cups low sodium chicken broth
  • ¼ cup flour
  • 2 cups cooked chicken (shredded or diced into small peices)
  • 1 cup frozen peas
  • 1 cup frozen corn
  • 3 ribs diced celery (about 1 cup total)
  • 1 medium diced yellow onion
  • 4 large diced carrots (about 1 cup total)
  • 4 to 5 cloves garlic (or about 1 to 2 tbsp minced from jar)
  • ¼ tsp turmeric optional, but does give the soup the rich golden yellow color
  • 4 to 5 sprigs fresh thyme (you can do ¼ tsp dry, but really recommend the fresh if you can find it easily)
  • salt & pepper to taste
