This Baked Falafel Salad is perfect for lunch or dinner. It is very easy to make and the falafels are gluten-free, oil-free and delicious.
Ingredients
  • For the salad:
  • Sweet corn
  • Arugula
  • Yellow bell pepper
  • Red bell pepper
  • Green bell pepper
  • Shredded carrots
  • Tomatoes
  • Cucumber
  • Kidney beans, cooked and rinsed
  • Quinoa, cooked
  • Fresh mint leaves (optional)
  • For the falafels (makes 13):
  • 125 g quinoa, cooked
  • 130 g black beans, cooked and rinsed
  • 50 g gluten-free oats
  • 50 g tomato paste
  • 30 g vegan barbecue sauce
  • 1 clove of garlic, chopped
  • 1 tbsp curry powder (10 g)
  • 1/4 tsp cayenne pepper
  • salt & pepper to taste
  • For the avocado dressing:
  • 1 large avocado
  • 1/2 cup water (125 ml)
  • juice from 1 lime
  • 1 clove of garlic
  • 1 handful fresh cilantro
  • 1/2 tsp ground pepper
  • 1/4 tsp cayenne pepper
