The Best Icebox Strawberry Pie

Married since June 18, 1967 to the same man. Three adult children, 2 sons and a daughter. Six grandchildren, 5 boys and 1 girl. Also have my fur babies Lola, a 3 year old female Pomeranian and Sly, a 7 month old male Pom. They are both a big part of our family.

2 tablespoons lemon juice

2 tablespoons water

2 envelopes unflavored gelatin (two 1-ounce packages)

1 cup granulated sugar

pinch of salt

1 pound fresh strawberries hulled and sliced thin

12 fresh strawberries hulled, for topping (optional)

2 ounces cream cheese softened

1 tablespoon granulated sugar

½ teaspoon vanilla extract

½ cup heavy cream
