Green Tofu Marinade
Ingredients
  • 2c, lightly packed green herbs (one must be parsley)
  • 5 scallions, chopped, green and white parts
  • ¼ c Lime Juice
  • ¼ c Olive Oil
  • 1 tsp Cumin, ground
  • 1 tsp Coriander, ground
  • 1 Tbsp Chili Powder (single chili, not a blend, preferably smoked)
  • 1 tsp Salt (more to taste)
Steps
  1. Blend on high until super smooth. It will look overly thick but it’s fine.
  2. Pour over pressed tofu that has been torn into small pieces and let sit for at least an hour.
  3. Bake in a 450°F oven for 30 to 40 minutes with all of the marinade on it.
  4. When it starts to look a bit browned at the edges, you’re done.
Notes
  • You can play with this a lot. Different herbs, different spices. Add lemon juice or vinegar instead of lime. Just keep the proportions vaguely the same and it should be good.
