Oil-Free Almond Cherry Muffins
Ingredients
  • 1 cup oat flour (see note)
  • 1 cup whole wheat pastry flour
  • ⅔ cup almond flour
  • 1 tbsp baking powder
  • ½ tsp salt
  • ¾ cup unsweetened almond milk (or any plant milk)
  • ⅓ cup maple syrup
  • 2 tbsp almond butter
  • 1 ¼ tsp pure almond extract
  • 1 cup tart cherries fresh or frozen cut in halves or quarters if large
  • ½ cup sliced almonds
  • 2 tbsp granulated or coarse sugar (optional)
