00 Viet "Mom's" Braised pork belly and boiled Eggs

Ingredients
  • 1 to 2 lbs of Pork belly cubed
  • 3 tbsp of fish suace
  • 3 tbsp of soy sauce
  • ¼ tsp of salt
  • 3 clove of garlic (minced)
  • ½ tsp pepper
  • 1 tbsp of sugar
  • 1 can of sweet coconut soda (substitutions; 2 cups of young coconut juice, ¼ cup brown or white sugar)
  • 1 tbsp of oil
  • 2 cups water
  • 4 tbsp of sliced green onion
  • 6 to 8 boiled eggs
Steps
  1. Mix Pork belly cubed with fish suace, soy sauce, salt, garlic (minced),  marinate at less 3hrs to over night.
  2. In a large pan add oil and sugar and carmelize. add marinated meat sir/coat and brown.
  3. add sweet coconut soda and add just enough water to simmer, turn up heat boil and turn down to med/low heat. Cook till meat is tender
  4. add 6 to 8 boiled eggs and top with sliced onion
