Creamy Dairy Free Chicken and Vegetable Soup
Ingredients

  • 5 cups chicken broth
  • 2 boneless skinless chicken breasts - about 1 to 1 ½ pounds, or about 3 cups worth of leftover cooked shredded chicken
  • A few big handfuls of baby spinach
  • ¼ cup parsley, chopped
  • Salt and pepper to taste
