Pulled Chicken Nachos w/creamy corn

Ingredients
  • 1 Bag Mission Corn Chips (chilli&lime)
  • 2x chicken breast
  • 1 small bag grated tasty cheese
  • 1tin corn kernels
  • 1jar salsa
  • 1pk taco seasoning
  • 1avocado
  • 1 cucumber
  • 2tomatoes
  • 1 purple onion
  • 1.5 tbsp butter
  • ⅓ cup cream cheese or sour cream
  • 1 garlic clove
  • Salt & pepper
  • Salad dressing (optional)
Steps
  1. 1-preheat oven to 200degrees. Place chicken, salsa & taco seasoning in an oven proof dish and cover tightly with a heavy lid or alfoil. Bake for 1hr 15minutes.
  2. 2- Meanwhile, combine cream cheese, butter & garlic in a small oven proof saucepan over medium- high heat. Cook for 2mins then stir in drained corn kernels. Stir for 2mins then remove from heat. Season with s&p.
  3. 3-sprinkle ¼ cheese on the cheese mixture & place in oven for 15 to 20mins until it is bubbling
  4. 4-cut tomatoes, cucumber, red onion and toss together with s&p and dressing of your choice.
  5. 5-Mash avocado & season
  6. 6- when checking has done 1hr & 15-remove from oven & shred with 2 forks. Lay corn chips of baking tray/oven proof serving platter- spoon chicken over the top & sprinkle on cheese. Place back in the oven for 10mins.
  7. 7- remove from oven & spoon cheesy corn over the top. Sprinkle with salsa salad and serve with mashed avocado on the side.
