  • 18 littleneck clams, scrubbed

  • 2 medium shallots, minced
  • 1 small green bell pepper, minced
  • 2 ounces  of Canadian bacon, finely chopped (about ½ cup)
  • 2 teaspoons  of white-wine vinegar
  • ¾ cup of fresh breadcrumbs, preferably whole-wheat
  • ½ cup of grated Parmesan cheese
  • 2 tablespoons  of chopped fresh chives
  • 2 teaspoons  of minced fresh oregano, or 1 teaspoon dried
  • ½ teaspoon of smoked or regular paprika
  • ½ teaspoon of freshly ground pepper
