Instant Pot Mexican Quinoa and Chicken
Ingredients
  • 2 tablespoons extra virgin olive oil
  • 1 pound al fresco all natural Spicy Jalapeno Chicken Sausage
  • 1 large yellow onion chopped
  • 4 cloves garlic, minced
  • 1 large red bell pepper, cored and diced
  • 1 to 2 jalapeños, cored, seeds removed and minced
  • 15 ounces canned petite diced tomatoes, drained (1 can)
  • 1 cup chicken stock
  • 1¼ cups dry quinoa
  • 2 teaspoons ground chili powder
  • 2 teaspoons smoked paprika (sweet not hot)
  • 1 teaspoon cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • ¼ teaspoon red pepper flakes (optional)
  • 15 ounces canned black beans, rinsed and drained (1 can, I used organic)
  • 1 cup freshly chopped cilantro
  • 1 tablespoon fresh squeezed lime juice (½ lime)
