Peach Rustica Gluten Free Dessert by Ellen
Full of Rich Melt in your Mouth Flavor

Ingredients
  • 2 peaches pitted, sliced with skins on
  • Avocado oil spray (or whatever you use to keep it from sticking to your dish.
  • 2 Tablespoons Butter
  • ¼ cup of Organic Coconut Palm Sugar or brown sugar
  • ½ tsp ground cinnamon (or more...you decide)
  •  
  • Topping
  • ½ cup Gluten Free Bisquick
  • ½ cup half and half or milk
  • 2 tablespoons olive oil
  • 1 egg
  • To taste...cinnamon shakes on top, organic coconut Palm Sugar
Steps
  1. Spray a ramekin with olive oil, add sliced peaches, and sprinkle with ¼ cup of coconut Palm sugar and generous sprinkle of cinnamon, dot with 1 to 2 Tblspoons of butter
  2. Mix topping, pour ½ over each Ramekin, generous sprinkling of coconut Palm sugar and cinnamon.
  3. Bake 25 minutes 400 degrees. Pull when slightly browned (Add 10 minutes if not browned) and cooked thru on top. serve warm with a spoon.
  4. Premium vanilla ice cream would be good. I just dug in and thoroughly enjoyed it!
Notes
  • Stephanie, daughter, brought Georgia Peaches when she came to visit. I whipped this up and it was amazing! Peaches are available in Colorado in late August. I’m ready!
