Beef Queso Dip

Ingredients
  • ½ lb - Ground Beef
  • 1 ea - Jalapeno Pepper, de-seeded & chopped
  • ½ cup - Heavy Whipping Cream
  • 2 Tbsp - Water
  • 6 oz - Cheddar Cheese, shredded
  • 4 oz - Pepper Jack Cheese, shredded
  • 2 oz - Cream Cheese, softened
  • 1 cup -Tomatoes & Green Chiles, chopped & drained
  • ¼ cup - Salsa
Steps
  1. Add ground beef to skillet and break meat apart with spatula. When beef starts to brown and is just slightly pink, add chopped jalapeno. Cook until pepper is soft and beef is cooked through. Drain excess grease, if any.
  2. In medium saucepan, add heavy whipping cream and water. Stir over medium heat until it begins to simmer.
  3. Add cream cheese and stir until fully melted.
  4. Once cream cheese is melted, gradually add shredded cheeses & stir until completely melted.
  5. When cheeses are melted, stir in salsa.
  6. Continue stirring for a couple of minutes, then add in diced tomatoes/green chiles and beef mixture.
  7. Heat through for 3 to 5 minutes and serve warm.
