Coconut Flour Low-Carb Zucchini Bread (Dairy Free)
Ingredients
  • 50 g ( ½ cups) coconut flour
  • 1 teaspoon baking powder
  • 4 tablespoon granulated sweetener, of choice or more to your taste
  • ½ teaspoon salt or to taste
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 teaspoon vanilla extract
  • 5 eggs - medium
  • 130 g ( 1 cups) grated/shredded zucchini (measure after squeezing out the water)
  • 30 g ( ⅓ cup) walnut halves/pieces (optional)
