  • 4 cups shredded green cabbage

  • 1 Scotch bonnet or habanero pepper, finely chopped
  • 2 medium scallions, thinly sliced
  • ½ medium green bell pepper, thinly sliced, optional
  • ½ medium red bell pepper, thinly sliced, optional
  • 3 red radishes, thinly sliced, optional
  • 2 cups distilled white vinegar
  • 5 tablespoons freshly squeezed lime juice
  • ¼ cup fine sea salt (do not use iodized salt)
