Vegetable Curry (Vegan)
Ingredients
  • 1 tablespoon extra virgin olive oil
  • 1 onion, chopped
  • 2 tablespoons curry powder
  • Grated fresh ginger
  • 3 cups water
  • 2 sweet potatoes, cut into 1-inch chunks
  • 2 carrots, peeled and chopped
  • 1 cup red lentils or dried split peas (optional)
  • 1.5 teaspoons fine sea salt
  • Freshly ground black pepper, to taste
  • ½ cup full-fat coconut milk (optional)
  • 1 cup chopped kale, stems removed (optional)
  • optional: ½ tablespoon Frank’s hot sauce
  • optional: ½ tablespoon maple syrup
