Andhra Spiced Egg Curry
Ingredients
  • 3 eggs boiled, peeled and halved
  • 2 tbsp vegetable oil
  • 1 tsp mustard seeds
  • 1 medium onion finely chopped (or 5 to 7 small shallots thinly sliced)
  • 1 small cinnamon stick halved
  • 2 green chillies slit lengthwise
  • 2 tomatoes roughly chopped
  • 1” piece ginger thinly sliced
  • ½ tsp turmeric powder
  • 1 tsp kashmiri chilli powder (or mild chilli powder)
  • 1 tsp coriander powder
  • 1 tsp tamarind concentrate
  • 100mls water
  • 50mls coconut milk
  • 8 to 10 curry leaves
  • Salt to taste
