Ingredients
- subheading: Seasoning for Chicken:
- 4 pieces bone-in chicken breasts or drumsticks, skin removed about 6 ounces each see note 1
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon black pepper
- ¼ teaspoon salt
- subheading: Cacciatore Sauce:
- 1 Tablespoon olive oil
- 1 large onion, peeled, diced
- 1 large red pepper, seeded and sliced thin
- 8 ounces mushrooms, sliced thin
- 4 cloves garlic, peeled and minced
- 2 Tablespoons balsamic vinegar
- ½ cup white wine I use a Pinot Grigio
- ½ cup fat-free chicken stock
- 14 ½ ounce can of diced tomatoes fire roasted tomatoes are preferred
- 2 teaspoons tomato paste
- 1 bay leaf
- ¼ cup Kalamata olives, pitted and halved
- 1 Tablespoon Italian seasoning
- 1 teaspoon dried parsley
- salt and pepper, to taste
- Parmesan cheese, garnish optional
- fresh basil or parsley for garnish optional
