  • 1 cup edamame beans (pre-cooked)
  • ½ cup quinoa
  • 2 oz baby spinach
  • 1 tsp ginger, fresh (finely grated)
  • 1 ¼ tbsp apple vinegar
  • 2 tsp sugar
  • 4 ½ tsp low sodium soy sauce
  • 1 ½ tsp sesame oil
  • Salt and pepper to taste
