Dylan Dreyer's Breakfast Delight Wraps
Ingredients
  • 1 large burrito-size tortilla
  • 2 to 3 eggs, scrambled
  • 2 slicesMuenster cheese
  • ½ avocado, thinly sliced
  • 6 to 8 thin slices cucumber
  • 1 handfulbaby spinach
  • salt and freshly ground black pepper, to taste
  • We have this little market in our building and the "breakfast delight wrap" is our favorite, although we always eat it for lunch. We've made a few small changes and the kids get so excited to eat it. Even Rusty eats the eggs and cheese out of the middle! Calvin asks me to make it for his school lunch, too!
  • TECHNIQUE TIP: Scramble the eggs with a little milk and salt and pepper. Don't break up too much as you cook it. It's easier to keep it together in the wrap when it's more like an omelet.
