My Mocha Hazelnut Cookies

Ingredients
  • 16oz myokos
  • 5oz coconut sugar
  • 12oz maple sugar
  • 1t molasses
  • 3 eggs (more makes it fluffier)
  • 1t van
  • 2.5t coffee ext, or espresso
  • 2t salt
  • 18oz gf flour
  • 2oz cocoa
  • 1t b. soda
  • 10oz toasted hazelnuts,chopped
  • 12oz semi-sweet chocolate chips
  • 2oz unsweet chocolate chips
  • (or dip/drizzle with chocolate?)
Steps
  1. Cream butter and sugars
  2. add eggs
  3. add vanilla
  4. Mix dry and add
  5. fold in hazelnuts and chips
  6. scoop & chill at least 30min
  7. 325° 20min, rotating at least once
Notes
  • Sub Myokos butter for DF
  • Sub AquaFaba for eggs
  • For GF, increase to 2 eggs
