Ingredients
  • 1 cup raw cashews
  • ½ cup water (plus some additional water to soak the cashews)
  • 2 tablespoons ghee or grassfed butter
  • 1 small yellow onion, finely diced
  • 2 celery stalks, ends removed, finely diced
  • 2 tablespoons arrowroot or tapioca starch
  • 2 ½ cups celery root, peeled and diced into ½” cubes - approximately 1 pound (or peeled and diced red potatoes, if you tolerate them)
  • 2 cups chicken broth
  • 3 - 6.5 ounce cans of chopped clams , packed in juice
  • 2 bay leaves
  • Sea salt and pepper , to taste
