Mandy Lee's Mapo Tofummus Made Vegan
Ingredients
  • 3 garlic cloves, smashed and peeled
  • 1 tbsp canola oil
  • ½ tsp soy sauce
  • 1 lb tofu
  • 1 ½ tsp toasted sesame oil
  • ⅓ tsp sea salt
  • 1 block of completed tofu grounds (see recipe in post)
  • 1 tsp plus 1 tbsp toasted sesame oil
  • ½ tsp potato or corn starch
  • 3 tbsp canola oil
  • 1 tbsp doubanjiang
  • 1 tsp mushroom powder
  • ½ tsp minced fermented black beans
  • ½ to ¾ tsp gochugaru
  • 2 garlic cloves, grated
  • 2 tsp grated ginger
  • 1 tsp ground Sichuan peppercorn plus more for dusting
  • ⅛ tsp ground cumin
  • 2 tbsp Shaoxing wine or Sherry
  • ¼ cup vegan chicken stock
  • 1 ½ tsp apricot jam
  • ¼ tsp ground white pepper
  • splash of rice vinegar
  • finely diced scallions for serving
