Juicy Slow Cooker Pineapple Chicken
Ingredients
  • 2 pounds bone-in, skin-on chicken thighs (about 6 thighs)
  • kosher salt, to taste
  • ground black pepper, to taste
  • 2 cups fresh pineapple chunks, or one (20 oz) can
  • 1 medium onion, diced (about 2 cups)
  • ¼ cup pineapple juice (or reserved liquid from canned pineapple)
  • ¼ cup brown sugar, packed
  • 2 to 3 cloves garlic, minced (about 1 Tablespoon)
  • 1 Tablespoon minced ginger
  • ¼ teaspoon crushed red chili flakes, or more to taste (optional)
  • 3 Tablespoons honey
  • 2 Tablespoons soy sauce (reduced sodium soy sauce is OK)
  • 2 Tablespoons rice vinegar or apple cider vinegar
  • 2 to 3 Tablespoons cornstarch mixed with 2 to 3 Tablespoons water
  • 1 medium red bell pepper, chopped (about 1 cup)
  • 1 teaspoon toasted sesame seeds (optional garnish)
  • 2 Tablespoons chopped fresh cilantro or parsley (optional garnish)
