Keto - Lasagna using riced cauliflower
Optional: Add a layer of well-drained frozen spinach or fresh baby spinach leaves for added goodness!

Ingredients
  • 1 lb ground spicy sausage
  • 1 lb ground beef (3 lbs if Keto)
  • 2 tab Olive oil
  • 2 cloves minced garlic
  • ½ large onion, diced
  • 14 oz diced tomatoes (optional: add a second can)
  • 6 tablespoons tomato powder
  • 4 tablespoons Italian seasoning, DIVIDED
  • Salt to taste
  • Pepper to taste
  • 3 eggs
  • 2 cups (24oz) ricotta cheese or cottage cheese
  • 1 cup grated Parmigiano Reggiano cheese
  • 4 cups shredded mozzarella cheese, DIVIDED
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 1 large bag (1.5 lbs or 680 grams) riced cauliflower or one head cauliflower, riced
  • Optional - thawed and well drained frozen chopped spinach
Steps
  1. In a microwavable bowl, cook riced cauliflower until desired texture and drain thoroughly (about 9 minutes if frozen).  When done, set bowl on counter to cool before adding cottage cheese.
  2. In a pot or skillet on the stove, brown meats, drain and set aside cooked meats
  3. Reusing the same pot, heat olive oil and brown garlic
  4. Add diced onion and cook to partially translucent
  5. Return meat to pot
  6. Add diced tomatoes and mix thoroughly
  7. Sprinkle tomato powder onto meat mixture, 1 tablespoon at a time, and mix well to avoid clumping
  8. Add 2 tablespoons Italian seasonings to the meat, and salt and pepper to taste.
  9. Heat to remove excess liquid, if any.
  10. Complete cauliflower cheese mixture by adding cottage cheese to the cooked riced cauliflower.
  11. Add eggs, 2 tablespoons Italian seasonings, salt and pepper, and beat in until mixed.
  12. Add Parmesan cheese and 2 cups of the shredded mozzarella
  13. Add optional thawed, well drained, chopped spinach to the cauliflower cheese mixture.
  14. Preheat oven to 350 degrees.
  15. For Keto version (4 lbs meat), spread ½ of the meat mixture to cover bottom of a large casserole dish (10x15, 4.8 qt baking dish... or two 9x9 dishes?).
  16. For a Low Carb version (2 lbs meat) spread the CAULIFLOWER & CHEESES mixture in the next step on the bottom of a WELL OILED large casserole dish.
  17. Carefully spread the entire cauliflower, egg and cheeses mixture on top of the meat layer (for Keto version) or onto the bottom of the casserole dish (for Low Carb version).
  18. Carefully spread the remaining meat over the cauliflower mixture.
  19. Evenly spread the remaining 2 cups of mozzarella on top.
  20. Bake for 30 minutes at 350 degrees.
  21. Use broiler to brown mozzarella top if necessary

  • Keto version is meat/cauliflower cottage cheese/meat/mozzarella layers
  • Low carb version is oil/cauliflower cottage cheese/meat/mozzarella layers
