Ingredients
- 1 lb ground spicy sausage
- 1 lb ground beef (3 lbs if Keto)
- 2 tab Olive oil
- 2 cloves minced garlic
- ½ large onion, diced
- 14 oz diced tomatoes (optional: add a second can)
- 6 tablespoons tomato powder
- 4 tablespoons Italian seasoning, DIVIDED
- Salt to taste
- Pepper to taste
- 3 eggs
- 2 cups (24oz) ricotta cheese or cottage cheese
- 1 cup grated Parmigiano Reggiano cheese
- 4 cups shredded mozzarella cheese, DIVIDED
- 1 teaspoon salt
- ½ teaspoon pepper
- 1 large bag (1.5 lbs or 680 grams) riced cauliflower or one head cauliflower, riced
- Optional - thawed and well drained frozen chopped spinach
Steps
- In a microwavable bowl, cook riced cauliflower until desired texture and drain thoroughly (about 9 minutes if frozen). When done, set bowl on counter to cool before adding cottage cheese.
- In a pot or skillet on the stove, brown meats, drain and set aside cooked meats
- Reusing the same pot, heat olive oil and brown garlic
- Add diced onion and cook to partially translucent
- Return meat to pot
- Add diced tomatoes and mix thoroughly
- Sprinkle tomato powder onto meat mixture, 1 tablespoon at a time, and mix well to avoid clumping
- Add 2 tablespoons Italian seasonings to the meat, and salt and pepper to taste.
- Heat to remove excess liquid, if any.
- Complete cauliflower cheese mixture by adding cottage cheese to the cooked riced cauliflower.
- Add eggs, 2 tablespoons Italian seasonings, salt and pepper, and beat in until mixed.
- Add Parmesan cheese and 2 cups of the shredded mozzarella
- Add optional thawed, well drained, chopped spinach to the cauliflower cheese mixture.
- Preheat oven to 350 degrees.
- For Keto version (4 lbs meat), spread ½ of the meat mixture to cover bottom of a large casserole dish (10x15, 4.8 qt baking dish... or two 9x9 dishes?).
- For a Low Carb version (2 lbs meat) spread the CAULIFLOWER & CHEESES mixture in the next step on the bottom of a WELL OILED large casserole dish.
- Carefully spread the entire cauliflower, egg and cheeses mixture on top of the meat layer (for Keto version) or onto the bottom of the casserole dish (for Low Carb version).
- Carefully spread the remaining meat over the cauliflower mixture.
- Evenly spread the remaining 2 cups of mozzarella on top.
- Bake for 30 minutes at 350 degrees.
- Use broiler to brown mozzarella top if necessary

- Low carb version is oil/cauliflower cottage cheese/meat/mozzarella layers
