- 1 avacado, peeled and pitted
- ¼ cup mayo
- ¼ cup low fat buttermilk
- ¼ tsp kosher salt
- ⅛ tsp dried basil
- freshly ground black pepper
- juice from wedge of lime
- subheading: Egg Rolls:
- 1 Tbsp olive oil
- 1 lb lean ground turkey
- ½ tsp kosher salt
- 2 Tbsp chopped red bell pepper
- 1 - 4.25 oz. can diced green chilis
- ½ cup fresh spinach, chopped into small pieces
- ½ cup frozen corn kernals
- ¼ cup canned black beans, rinsed and drained
- 1 tsp ground cumin
- 1 Tbsp chili powder
- 1 pkg. egg roll wrappers (in the produce section of my grocery store)
- 1 ½ cup shredded cheddar cheese
