Ingredients
  • 1 Chinese eggplant, sliced

  • Handful cherry tomatoes, sliced in ½

  • Handful pitted green olives, chopped
  • 10 mL (2 tsp) oregano
  • 5 mL (1 tsp) red pepper flakes
  • Salt and pepper to taste
  • Drizzle of olive oil
  • Drizzle of balsamic vinegar
