Easy One-Pot Japanese Curry Chicken and Rice
Ingredients
  • 2 lbs boneless chicken thighs
  • 1 tbsp avocado oil
  • 4 tbsp butter
  • ½ onion, diced
  • 4 tbsp yellow curry powder
  • 1 clove garlic, minced
  • ¼ tsp ground ginger
  • ¾ tsp ground nutmeg
  • 1 ½ cups rice (jasmine or basmati)
  • 2 to 3 carrots, peeled and sliced into rounds
  • 1 large russet potato, peeled and cut into ½ cubes
  • 3 ½ cups chicken broth, divided
  • Salt and pepper to taste
  • Green onions and sesame seeds for garnish (optional)
