Creamy Tuscan White Bean Soup

I love to cook and I love to try different foods, my husband and I usually have a garden every summer so I put up/can lot of my tomatoes and green beans. We love to eat fresh veggies and share when we have plenty!

¼ cup extra virgin olive oil

3 medium shallots finely chopped

5 cloves garlic minced

2 carrots chopped into coins

2 stalks celery diced

1 tbsp tomato paste

2 tsp kosher salt

1 tsp basil

1 tsp oregano

1 tsp parsley

1 tsp thyme

1 tsp red pepper flakes

½ tsp black pepper

2 15 oz cans cannellini beans, drained and rinsed

2 bay leaves

4 cups water

3 cups fresh spinach
