Avgolemono Soup
Ingredients
  • 4 cups of water
  • 2 pounds bone-in, skin-on chicken thighs and/or legs
  • 1 medium white onion, quartered
  • 2 large carrots, cut into chunks
  • 2 stalks of celery, cut into chunks
  • 1 to 2 bay leaves
  • ¼ cup long-grain white rice, rinsed and drained
  • 1 egg white, room temperature
  • 3 egg yolks, room temperature
  • 1 tablespoon lemon zest
  • ¼ cup lemon juice
  • 1 teaspoon of salt
  • ½ teaspoon of pepper
  • Fresh parsley, dill and oregano, for garnish (optional)
  • Additional fresh lemon zest, for garnish (optional)
