Lemon Blueberry Oatmeal Squares

Ingredients
  • 3 cups blueberries
  • 2 tsp sugar or Splenda Combine in separate bowl
  • 3 cups oats
  • 2 scoops vanilla protein powder
  • 1 tsp baking powder.
  • 3 eggs or 10tbsp egg whites
  • 2 cups milk
  • 3 tbsp lemon juice
  • 2 tbsp maple syrup
  • 1 tbsp melted butter
  • 4 oz cream cheese
  • 2 tbsp sugar.

Steps
  1. mix 3 cups blueberries and 2 tsp sugar or Splenda and set aside
  2. Combine in separate bowl 3 cups oats, 2 scoops vanilla protein powder, 1 tsp baking powder. Mix together.
  3. Add to dry mix - 3 eggs or 10tbsp egg whites, 2 cups milk, 3 tbsp lemon juice, 2 tbsp maple syrup, 1 tbsp melted butter, and your macerated blueberries.
  4. Spray 13x9 pan and add the mixture
  5. Separately Mix 4 oz cream cheese & 2 tbsp sugar. Toss in microwave to soften and dollop on top of your oatmeal mix in the pan and swirl it in.
  6. Bake 350 degrees for 35 to 40min or until center is set.
  7. Garnish with lemon zest. Cut into 6 pieces store in fridge
