  • Zest of 1 lemon
  • 3 tablespoons grade A maple syrup plus more to taste
  • 1 teaspoon vanilla extract
  • ¼ teaspoon kosher salt
  • 2 cups quick-cooking or rolled oats*
  • 1 tablespoon chia seeds or ground flaxseed
  • 1 tablespoon poppy seeds
  • Topping suggestions: fresh blueberries vegan yogurt, nut butter, etc.
