Potato & leek soup
Ingredients
  • 3 leeks
  • 2 or 3 large potatoes
  • 1L chicken stock
  • 1 tble butter
  • Cream (optional)
  • Salt (to taste)
Steps
  1. 1. Trim leeks & cut finely into rounds.
  2. 2. Melt butter, add leeks & stir until opaque & softened
  3. 3. Peel & grate potatoes- add leeks
  4. 4. Add chicken stock and cook until soft, around 30 to 35 minutes
  5. 5. When cool, blend mixture, add salt to taste
  6. 6. Stir in cream & heat
