Potato Sausage
Old fashioned-style

Ingredients
  • 5 pounds pork butts
  • 10 pounds potatoes cubed
  • 7 Tbs salt
  • 2 Tbs allspice
  • ¾ tsp white pepper
  • ¾ tsp black pepper
  • 6 onions
  • 30 feet hog casings (32 mm)
Steps
  1. Soak casings in cold water
  2. Debone pork, peel potatoes.
  3. Run the pork, potatoes, and onions through a course plate 3/8" or ½" plate.
  4. Stuff into the casings.
  5. IMMEDIATELY freeze. Otherwise the sausage will turn black.
  6. Cook the sausage for 45 minutes at a slow simmer.
  7. If frozen, put in cold water, bring to a boil and simmer for 45 minutes.
