Ingredients
- 5 pounds pork butts
- 10 pounds potatoes cubed
- 7 Tbs salt
- 2 Tbs allspice
- ¾ tsp white pepper
- ¾ tsp black pepper
- 6 onions
- 30 feet hog casings (32 mm)
Steps
- Soak casings in cold water
- Debone pork, peel potatoes.
- Run the pork, potatoes, and onions through a course plate 3/8" or ½" plate.
- Stuff into the casings.
- IMMEDIATELY freeze. Otherwise the sausage will turn black.
- Cook the sausage for 45 minutes at a slow simmer.
- If frozen, put in cold water, bring to a boil and simmer for 45 minutes.
