Ingredients

  • 1 can or bag of frozen corn salt-free (drained)
  • 8 oz creamed corn (I creamed a can of corn in food processor with seasoned water)
  • ☆1 cup corn meal
  • ☆¼ cup flour (I use wheat or barley)
  • ☆Or any compliant corn bread mix.

  • note: Note: I was going to use Jiffy cornbread mix, but the ingredients include animal lard among other things, so I tried it with the main ingredients of corn meal and flour. Not sure if there is a complaint cornbread mix out there.
  •  
  • 8 oz silken tofu [I blended this with the nooch in my food processor to get a creamier consistency.]
  • green onions finely chopped
  • ¼ cup - ½ cup nutritional yeast
  • Pepper as desired
  • 1 tablespoon Onion powder
  • Garlic to taste, I used about 1 tablespoon
  • 1tblspn cumin
  • I used diced jalapenos with the jalapeno juice.
  • A dash of red pepper flakes (my preference)
  • 1 tblspn Kirkland's No-salt seasoning
  • Any other spices you like!

  • Onion (sauté then add to mix)
  • Celery (sauté)
  • Carrot (sauté)
  • Any veggie (sauté)
  • Mushrooms
  • Green chili
  • Black olives
