Tuna and Quinoa Cakes
Ingredients
  • ¾ cup raw cashews
  • ¾ cup water
  • 3 5-oz cans yellowfin tuna in water, drained
  • 6 oz large shrimp, peeled, deveined, tail removed, and finely chopped
  • 1 tsp granulated garlic powder
  • 1 tsp onion powder
  • 1 tsp sea salt
  • ¼ tsp ground black pepper
  • ½ cup quinoa, cooked
  • ½ cup white beans, drained
  • ¼ cup carrots, grated
  • ¼ cup green onions (white and green parts), finely chopped
  • ¼ cup cilantro, chopped
  • 4 tbsp hemp hearts

  • 1 tbsp lemon zest
  • 1 tbsp fresh lemon juice
  • ¼ cup gluten-free oat flour
  • 2 tbsp avocado oil (for frying)
  • 1 avocado, sliced
