CARROT, GINGER & COCONUT SOUP
Ingredients
  • 300g firm tofu
  • 1 onion diced
  • 1 tbs (20g) fresh ginger grated
  • 1 tsp ground turmeric
  • 3 medium carrots peeled & chopped
  • 3 cups (750ml) vegetable stock
  • 1⁄4 cup (65ml) coconut cream
  • salt & pepper, to taste
  • 1⁄2 tsp black sesame seeds
  • 2 (70g) medium wholegrain rolls (or gluten free) warmed
