Stuffed Peppers (Vegan)
Vegan Stuffed Peppers are filled with a “meaty” and flavorful rice vegetable mixture that is easy to make on the stovetop. A total comfort food classic and gluten-free!
Ingredients
  • 6 - Bell peppers, 6
  • ¼ cup - Olive oil
  • 1 - Onion, diced
  • 2 - Carrots, shredded
  • 1 - Bell pepper, diced
  • 6 - Mushrooms, diced
  • 1 ½ cups Short-grain rice
  • 2 cups - Vegetable broth
  • 3 - Garlic cloves, minced
  • 1 tsp - Oregano
  • ½ tsp - Salt
  • ½ tsp - Pepper
