Family chili, made bean-less

Ingredients
- 3 to 4 pounds ground beef
- 1 pound ground spicy pork sausage
- 1 very large onion, diced (reserve ¼th)
- 2 bell peppers, diced (or two cans diced green chilis)
- 2 teaspoons garlic powder
- 2 tablespoons cumin
- ½ cup Williams Chili Seasoning
- 1 teaspoon cayenne pepper
- 1 tablespoon salt
- 1 teaspoon cinnamon (optional)
- 32 ounces beef broth
- 2 cans Rotel diced Tomatoes and green chilies
- 1 can diced jalapenos
- ½ cup tomato powder
- Shredded Cheddar Cheese (optional)
- Sour Cream (optional)
Steps
- Brown ground beef on low-medium, stirring occasionally
- Dice onion and pepper while beef is browning
- Drain all of the beef fat and discard (or reserve for keto eaters)
- Add spicy sausage and brown until thoroughly cooked
- Drain excess sausage fat and discard
- Add diced onion and green pepper to cooked meat mixture and sauté until slightly tender
- Add spices and stir until well mixed
- In a small cup, mix tomato powder with a little bit of cold water to make a paste and ensure all powder
- lumps are gone
- Add tomato paste mixture to chili and mix until fully incorporated
- Add broth, canned tomatoes and jalapenos and mix until fully incorporated
- Taste and add additional spices as needed
- Cook on low, stirring every 3 to 5 minutes, until flavors are melded and chili is hot
- Serve garnished with cheddar cheese, sour cream and diced raw onion, if desired
Notes
- For Keto eaters, add reserved beef fat as needed to increase fat content.
- For a chunkier chili, sauté small diced pork chops along with beef. Reduce beef by the amount of diced pork used.
- For non-Keto eaters, add cooked pinto beans after tomato paste.
