Cranberry, Apricot & Pecan Wild Rice Pilaf (Vegan, Gf)
Ingredients
  • ¾ cup pecans, chopped
  • 1 tbsp extra virgin olive oil
  • 1 heaping cup chopped sweet onion
  • 2 garlic cloves, minced
  • 1½ cups chopped celery + ½ cup, divided
  • 1½ cups uncooked wild rice
  • 2 cups vegetable broth (be sure to use gluten-free if required)
  • 1½ cups water
  • 1 bay leaf
  • ¾ tsp kosher salt (or to taste) + black pepper as desired
  • ½ cup dried cranberries
  • ⅓ cup dried apricots, chopped
  • ¼ cup golden raisins
  • ½ cup fresh cranberries, thinly sliced
