MY Instant Pot Egg Bites

Ingredients
  • 5 large eggs
  • ½ c cottage cheese
  • ½ c shredded Monterey Jack cheese
  • Salt, Pepper, Garlic Powder (I don't measure)
  • ½ c diced ham
  • ¼ c diced red & orange peppers
  • 2 T diced onion
Steps
  1. Whisk eggs until blended. Add cottage cheese and whisk. Add seasonings.
  2. Spray egg bite molds with cooking spray and place in the pan
  3. To each mold: Add some grated cheese, ham, peppers & onions.
  4. Pour eggs evenly into each mold. Leave ¼" clearance. Do not overfill and do not cover.
  5. Pour 1 c water and place trivet in inner pot. Place the pan on the trivet.
  6. Pressure cook HIGH 8 min then 8 min NR. Cool for 10 min in molds before flipping.
  7. Flip bites onto a paper towel lined plate.

  • I started with four eggs since I read to do that if using add ins. After I poured 4 molds, I added another egg. I didn't space out ham & veggies correctly, so I sprinkled the leftovers on top of the eggs. Cook 8 min, NR was 9, pressure gone. 9 min to pressure.. I only ate two; one was too moist, other fine. Paul said they were good but need more flavor. He didn't add salt & pepper so....
