This roast is delicious hot out of the oven, but what I really enjoy is making the leftovers into sandwiches. After refrigerating, slice the seitan very thin and warm it with gravy. Serve on crusty French bread with lettuce and tomato. Heaven!
Ingredients
  • 5 medium mushrooms regular, crimini, or baby bella
  • 1 ⅛ cups vital wheat gluten
  • ¼ cup rolled oats or quinoa flakes (old fashioned oatmeal)
  • ⅛ cup nutritional yeast
  • ½ teaspoon dried thyme
  • ½ teaspoon rubbed sage
  • ¼ teaspoon onion powder
  • ⅛ teaspoon hickory smoked salt optional
  • freshly ground black pepper
  • ¾ cups vegetable broth room temperature
  • 1 tablespoons soy sauce, coconut aminos, or gluten-free tamari
  • 1 cloves garlic peeled
  • ½ tablespoon tahini or other nut butter
